Method

For the kadhi
 

  1. To make kadhi, combine the curds and besan in a deep bowl and whisk well till no lumps remain.
  2. Add 3 cups of water and mix well and keep aside.
  3. Heat the ghee in a kadhai and add the cumin seeds and mustard seeds.
  4. When the seeds crackle, add the asafoetida and curry leaves and sauté for a few seconds.
  5. Add the prepared curds-besan-water mixture, salt, ginger-green chilli paste and sugar, mix well and bring to a boil for 2 minutes, while stirring continuously.
  6. Reduce the flame and simmer for 8 to 10 minutes, while stirring occasionally.
  7. Garnish the kadhi with coriander and serve hot with rotli, puran poli and khichdi.
