Ingredients
For Ginger Garlic Soup
1 tsp oil
1/2 tbsp finely chopped garlic (lehsun)
1/2 tbsp finely chopped ginger (adrak)
1/4 cup finely chopped carrot
1/4 cup finely chopped french beans
1/4 cup finely chopped cabbage
4 cups vegetable stock
1 1/2 tbsp cornflour
salt to taste
freshly ground black pepper (kalimirch) to taste
2 tsp finely chopped coriander (dhania)
Method
For ginger garlic soup
- To make ginger garlic soup, combine cornflour and 1/4 cup of water. Mix well to make cornflour slurry. Keep aside.
- Heat oil in a non-stick pan, add garlic and ginger and sauté on medium flame for a minute.
- Add carrots, cabbage and french beans, mix well and cook on medium flame for 2 minutes.
- Add the vegetable stock, corn flour slurry, salt and pepper to taste. Mix well.
- Cook on slow flame for 5 to 8 minutes until it becomes slightly thick consistency and garnish with coriander.
- Serve the ginger garlic soup warm.
