Ingredients
For The Salsa
2 tsp oil
1/4 cup chopped onion
1/4 cup chopped capsicum
1 cup chopped tomato
1 tsp chilli powder
salt and to taste
Other Ingredients
1 tbsp oil
1/4 cup chopped onion
1/4 cup chopped capsicums (red and yellow)
2 tsp cumin seeds (jeera) powder
2 tsp dry red chilli flakes (paprika)
2 cups cooked penne
1 1/2 cups white sauce
2 tbsp chopped coriander (dhania)
salt and to taste
1/2 cup grated processed cheese
Method
- Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
- Add the capsicum and sauté on a medium flame for 1 minute.
- Add the tomatoes, chilli powder, salt and pepper, mix well and cook on a medium flame for 1 minute. Keep aside.
- Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
- Add the capsicum, cumin seeds powder and chilli flakes and sauté on a medium flame for 2 minutes.
- Add the pasta, white sauce, coriander, salt and pepper and mix well.
- Pour the pasta in a greased baking dish, spread the prepared salsa on top and spread it evenly.
- Sprinkle cheese on top and bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
- Serve hot.
