A lusciously creamy sauce of paneer and milk flavoured with nutmeg and pepper plays host to boiled noodles, which is then topped with spinach and grated cheese. Ingredients

To Be Blended Into A Smooth Paneer Sauce (makes 1 Cup)
1 cup grated paneer (cottage cheese)
1/2 cup milk
1 tsp ground nutmeg (jaiphal) powder
1 tsp freshly ground black pepper (kalimirch)
salt to taste

For The Spinach Mixture
1 1/2 cups chopped and blanched spinach (palak) , refer handy tip
1 tbsp oil
1/4 cup finely chopped onions
2 tsp finely chopped garlic (lehsun)
salt and to taste

Other Ingredients
2 cups boiled noodles
1/4 cup grated mozzarella cheese
Method
For the spinach mixture

  1. Put the oil in a microwave safe bowl and microwave on high for 30 seconds.
  2. Add the onions and garlic, mix well and microwave on high for 1 minute.
  3. Add the spinach, salt and pepper, mix well and microwave on high for 2 minutes, stirring once after 1 minute. Keep aside.

How to proceed

  1. Combine ½ cup of the paneer sauce and noodles in a deep bowl and toss well.
  2. Put the above mixture in a baking dish, put the spinach mixture evenly over it.
  3. Pour the remaining ½ cup of paneer sauce evenly over it.
  4. Finally sprinkle the mozzarella cheese over it and microwave on high for 2 minutes.
  5. Serve immediately.

Handy tip:

  1. 5 cups of finely chopped spinach will yield approx. 1½ cups of blanched and chopped spinach.
