Method

For Mexican Rice

 

  1. To make Mexican rice, heat the oil in a pan.
  2. Add the chopped onion and fry for 2 minutes.
  3. Stir in the ginger-garlic paste and fry for another 1 minute.
  4. Add the boiled mixed vegetables, cooked rajma (kidney beans), and boiled sweet corn.
  5. Cook for 2 minutes on medium heat, stirring frequently to prevent burning.
  6. Stir in the tomato puree, a pinch of sugar, Kashmiri red chili powder, and salt to taste. Mix well to combine.
  7. Add the cooked long-grain Basmati rice and the chopped spring onion whites and greens.
  8. Mix everything well.
  9. Continue cooking on medium heat for 2 more minutes, allowing the flavors to meld.
