Corn and Jalapeno Fondue

Piping hot cheese fondue spiced with garlic and onions, taste great with corn and jalapenos. Quick and easy to make.

Makes 1 cup


Ingredients


1/4 cup boiled and crushed corn (makai ke dane)
1 tbsp chopped onions
2 tbsp chopped capsicum (red , yellow , green)
2 tbsp deseeded tomatoes
1 clove of garlic (lehsun) , finely chopped
1/2 cup milk
1 cup grated processed cheese
1 1/2 tbsp cornflour dissolved in 1 tablespoon of water
1 1/2 tsp chopped jalapeno
1 tsp cream
1 tbsp olive oil
salt to taste

For Serving
baked tortilla chips
lavash

Method
  1. Heat the oil in a pan, add onions and sauté for 1 minute.
  2. Add garlic, capsicum and tomatoes and sauté for 2 more minutes.
  3. Add the corn and cook on low flame for another 1 minute.
  4. Add the milk,1 cup of water,cheese, cornflour mixture stir till the cheese melts and the mixture thickens.
  5. Add the jalapenos and salt and cook for 2 minutes.
  6. Switch off the flame, stir in cream and serve hot in a fondue pot with tortilla chips and lavash.

A great variation to Cheese Fondue. Onions. garlic. capsicums and tomatoes are sauteed and then milk and cheese is added to make a nice thick rich fondue. Jalapenos add a good spice to it. Serve with cut hard top bread pieces or pieces of French bread.
