Why make plain cheese fondue when you can add more value to it with delicious ingredients like crushed sweet corn and jalapenos? colourful capsicum pieces add variety to the fondue while the onion and garlic add to the flavour. Serve this easy-to-make corn and jalapeno fondue piping hot with bread pieces.

Ingredients

1/2 cup boiled and lightly crushed sweet corn kernels (makai ke dane)
2 tsp finely chopped jalapeno
1 1/2 tbsp cornflour dissolved in 1/4 cup of
1 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
1 tbsp finely chopped onions
1/4 cup finely chopped coloured capsicum ( red , yellow and green)
2 tbsp deseeded and finely chopped tomatoes
1/2 cup milk
1 cup grated processed cheese
salt to taste
1 tsp fresh cream (optional)

For Serving
bread pieces

Method
  1. Heat the oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
  2. Add the onions, capsicum, mix well and sauté on a medium flame for 1 to 2 minutes.
  3. Add the tomatoes and sauté for 1 more minute.
  4. Add the corn, milk, cheese and ¾ cup of water, mix well and cook on a medium flame for 1 to 2 minutes or till the cheese melts, while stirring occasionally.
  5. Add the prepared cornflour-water mixture and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  6. Add the salt, cream, jalapeno, mix well and cook on a medium flame for 1 minute.
  7. Serve immediately with bread pieces.

A great variation to Cheese Fondue. Onions. garlic. capsicums and tomatoes are sauteed and then milk and cheese is added to make a nice thick rich fondue. Jalapenos add a good spice to it. Serve with cut hard top bread pieces or pieces of French bread.
