For The Pizza Base
1 cup bajra (black millet) flour
1 tsp carom seeds (ajwain)
2 tsp grated ginger (adrak)
1 tbsp chopped green garlic (hara lehsun)
salt to taste
2 tbsp olive oil

For The Topping
1/2 cup finely chopped radish pods (mogri)
1/2 cup finely chopped cabbage
1/2 cup finely chopped spinach (palak)
1/4 cup blanched carrot slices
1/4 cup boiled potato slices
1 cup roasted and grated red pumpkin
1 tsp cumin seeds (jeera)
salt to taste
2 tsp olive oil
1 tbsp finely chopped coriander (dhania)
1 tbsp chopped green garlic (hara lehsun)

For The Garnish
chopped spring onions white and greens

  1. Combine all the ingredients in a bowl, mix well and knead into a soft dough.
  2. Divide the dough into 4-6 equal portions and roll out each portion of the dough into 4" diameter rounds.
  3. Roast it crisp on tava using olive oil and keep aside.

  1. Heat the oil in a pan and add the cumin seeds.
  2. When the seeds crackle, add the garlic, mogri, cabbage, spinach and saute on a high flame for 2 minutes.
  3. Add the salt and pepper, mix well and cook till the vegetables turn soft. Keep aside.

How To assemble

  1. Place a crisp bajri pizza base on a clean plate and spread the above mixture on it.
  2. Layer the carrots, potatoes on it and sprinkle a thick layer of roasted grated pumpkin on top.
  3. Sprinkle salt and pepper and bake in a pre-heated oven for 5 minutes at 180 degrees.
  4. Serve hot garnished with spring onions.
