A Chinese dish, vegetable Manchurian is a perfect dish to be paired with noodles or fried rice. The vegetable Manchurian balls are cooked in a typical sweet and sour Chinese recipe .

100 gms chopped cabbage
20 gms chopped carrots
20 gms chopped french beans
50 gms boiled potatoes
30 gms cornflour
5 gms salt
2 gms white pepper powder
1 tbsp oil
1 tbsp chopped garlic (lehsun)
1 tbsp chopped ginger (adrak)
1 tsp chopped green chillies
2 tbsp chopped onions
100 ml Vegetable Stock
Light soya 1 tbsp
Dark soya 1/2 tbsp
Chilli paste 1 tsp
Corn flour slurry 1 tbsp
1 tbsp spring onion greens
1 tsp chopped coriander (dhania)

  1. - blanch all the vegetables except potatoes.
  2. - squeeze to remove extra water.
  3. - add grated potatoes, corn flour and seasoning.
  4. Mix together to make a dough.
  5. - divide into 9-10 balls of walnut size.
  6. - boil water, add salt and boil the vegetable balls for 8-10 minutes ( if the ball breaks add more cornflour).
  7. - strain and keep aside.
  8. - heat a little oil in a wok and add chopped ginger, garlic, onions and saute for a minute.
  9. - add vegetable stock and top it with light and dark soya sauces.
  10. - if you want to make it spicier, add chilli paste and mix.
  11. - add corn flour slurry to thicken and chopped spring onion.
  12. - remove from fire and pour over steamed vegetable balls.
  13. - garnish with the green portion of spring onion and coriander sprigs.
