Veg and paneer delights presents a healthy and tasteful vegetable dish recipe which goes well as a party main course dish with paranthas. The spicy onion-tomato gravy embodies the paneer cubes and mixed vegetables in this veggie and paneer delight recipe.

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

500 gms paneer (cottagte cheese) cubes
125 gms curds (dahi)
100 gms boiled carrots
50 gms boiled green peas
50 gms diced onions
50 gms diced tomatoes
25 gms diced capsicum
1/4 tsp curry powder
1 tsp lemon juice
salt and pepper to taste
  1. Combine the curds, curry powder and salt and whisk well.
  2. Add the paneer, mix well and keep aside to marinate for 30 minutes.
  3. Heat the oil in a pan, add the marinated paneer and vegetables and saute for 5 minutes or till the marinate dries.
  4. Insert the paneer alternating with the vegetables in a wooden skewers.
  5. Place these skewers in a greased baking dish, pour the yoghurt mixture on top and grill in an oven for 7-10 minutes.
  6. Serve hot with boiled vegetables.
