‘Minimal ingredients but maximum flavour’ – that is the mantra this recipe follows! By virtue of using everyday ingredients and simple but appropriate cooking methods to draw out the best aroma and flavour, the yummy, cheesy Zucchini Stir-Fry is bound to become everybody’s favourite. Take care to grate the zucchini thickly so that it does not lump up with the cheese when cooked. Also, serve immediately to avoid wateriness.
Zucchini features as an interesting finger food here, after being coated with a spicy batter and deep-fried to perfection. A spicy mayo dip made of mayonnaise and Schezuan sauce multiples the appeal of the Zucchini Fritters so much that it will test to will power to stop feasting on this snack! Zucchini, a vegetable that you generally tend to associate with continental dishes and baked recipes, fits beautifully into our all-time desi favourite – the humble thepla! The whole wheat flour dough is enriched with zucchini, ginger and garlic, and in a unique twist, we also put a little dried herbs and seasonings into it. This gives the Zucchini Thepla a very exciting, fusion flavour. Do not rest the dough for too long as it will get watery and you will not be able to roll it properly. Be generous with the oil while cooking, or you might end up with dry and hard theplas. Serve this delicious thepla with pickles and raita or dips . You can try exciting options like the Herbed Curd Dip and the Mustard Chilli Pickle .

Zucchini and cheese get along so beautifully together in this masterpiece! Juicy slices of zucchini are baked with a coating of bread crumbs and cheese, which gives it a very unique and enjoyable texture. Since the zucchini slices are dipped in olive oil before coating with other ingredients, you might find that some of the oil oozes out onto the butter paper on baking. That is normal, and not something to worry about! You will really love the gooey yet crisp texture of the cheesy crust – but make sure you have the Baked Cheesy Zucchini Slices fresh and hot, before they get chewy. You can also use parmesan cheese powder instead of grated cheese. Have a go at other zucchini delights like the Zucchini Fritters with Spicy Mayo Dip and Zucchini and Yellow Pepper Toast .

Mellow zucchini, pungent capsicum, peppy herbs and spiky spices come together to make a mind-boggling filling for mustard-lined hot dog rolls. Cheese cubes are also added to this arrangement as they melt when grilled, lending an irresistible flavour and texture to the sandwich. Serve the Zucchini and Bell Pepper Sandwich immediately after grilling with tangy tomato ketchup. This is a unique muffin with a fabulous, exotic flavour! A batter of plain dough is enhanced with grated zucchini, flax seeds powder and brown sugar, all of which give the muffins a very interesting mouth-feel and rare flavour. A dash of cinnamon, some mashed bananas and vanilla add to the flavour of the Zucchini and Flax Seed Muffins, making it a yummy treat that appeals to all. If you are not having these muffins immediately, warm them up for a few seconds in a microwave oven before serving. Serve these muffins for breakfast accompanied with a smoothie or milkshake .
