Thai Soup In Coconut Milk

A delicious combination of exotic vegetables in coconut milk!
- In a deep pan, add the stock, lemon grass, lemon leaves, red chillies and tomato puree, mix well and bring to boil.
- Strain in a bowl.
- In the same pan, add the coconut milk, lemon juice and all the vegetables and mix well and simmer for 15 minutes.
- Serve hot garnished with coriander.
