For The Dough
2 cups plain flour (maida)
2 tsp semolina (rava)
2 to 3 tsp ghee
a pinch salt

For The Stuffing
1/2 cup boiled sweet corn kernels (makai ke dane)
1 tsp cumin seeds (jeera) powder
a pinch asafoetida (hing)
1/2 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp dried mango powder (amchur)
1 tsp garam masala
1/2 tsp chaat masala
salt to taste

For the dough

  1. Combine all the ingredients in a bowl and knead in to a stiff dough using enough water.
  2. Cover the dough with a dish or a wet muslin cloth and keep aside for 10 minutes.

For the stuffing

  1. Drain the corn in water and lightly grind in mixture grinder no add water.
  2. Heat the oil in a pan and add the cumin seeds powder and asafoetida.
  3. When they crackle add the corn and saute for 2-3 minutes.
  4. Add the garam masala, chilli powder, haldi, amchur and salt mix well and stir for 5-6 minutes till the masalas are cooked.
  5. Cool and divide in to 12 equal portions and keep aside.

  1. Divide the dough in to 12 equal portions and roll out each portion of the dough into o a 50 mm. (2")diameter circle.
  2. Place one portion of the filling mixture in the center of the rolled dough circle.
  3. Surround the fillling mixture with dough by slowly stretching it over and seal the ends tightly and remove any excess dough.
  4. Roll each filled portion in to a 62 mm. (2 1/2)diameter circle taking care to ensure that the filling does not skill out.
  5. Gently press the center of the kachori with your thumb.
  6. Repeat with the remaining dough and filling to make 11 more kachoris.
  7. Deep fry the kachoris in hot oil in a slow flame till golden brown from both sides.
  8. Serve hot with chutney.
