  1. Heat the ghee in a kadhai, add the onions and saute till they turn golden brown in colour.
  2. Add the ginger-garlic paste and saute for 2 minutes.
  3. Add the vegetables and tomatoes, mix well and cook for 10 minutes.
  4. Add the garam masala, salt and chilli powder, mix well and cook till the vegetables are cooked.
  5. Add the rice and mix well and saute for 3 minutes.
  6. Serve hot garnished with mint.
