India meets Italy in this unique Tandoori Paneer Pizza! An assortment of veggies is first soaked in a richly flavoured marinade, and then sautéed to intensify the flavour, before being added as a desi style topping to thin crust pizza bases. The topping is sautéed on a tava to give it a tandoori finish, while the assembled pizza is baked in an oven, as always, to melt the cheese and achieve the right texture.
For the tandoori paneer topping- Combine the paneer, onions, capsicum, tomatoes and the marinade in a deep bowl, toss gently and keep aside for 10 minutes.
- Heat the oil on a non-stick tava (griddle), add the marinated vegetables and cook on a medium flame for 3 to 4 minutes, while stirring gently and occasionally.
- Divide the topping into 2 equal portions and keep aside.
How to proceed- Place a pizza base on a clean, dry surface, spread ¼ cup of pizza sauce and 1 portion of the tandoori paneer topping evenly over it.
- Finally sprinkle ¼ cup cheese evenly over it.
- Repeat steps 1 and 2 to make 1 more pizza.
- Place both the pizzas on a greased baking tray and bake in a pre-heated oven at 200°c (400°f) for 10 to 12 minutes or till the base is evenly browned and the cheese melts.
- Cut into equal wedges and serve immediately.

For making the Tandoori pizza paneer marinade, in a deep bowl, add the curd. Make sure you have used thick curd and to make that tie the curds in a muslin cloth and hang it till all the water drains out it will take approximately 1 hour. There should be no water in the dahi.

Add the chilli powder. The quantity can be adjusted as per the spice you can handle.

Add the dried fenugreek leaves this is very important as it gives a very nice aroma and flavour. Always remember when you add the kasuri methi, always crush them lightly between your palms.

Add the garlic paste. Also, you can add a little ginger paste if you like.

Add the butter. Make sure you use soft butter at room temperature. You can also use oil (preferrably mustard oil) if you wish to.

Add the besan. This is added to bind the marinade along with the vegetables and paneer.

Finally add the salt, mix it well using a spoon. Keep aside.

Add the onions cubes. Cut the onions into cubes using a sharp knife and then separate each.

Add the capsicum cubes. You can also use coloured capsicum if you wish to make it more colouful.

Add the tomatoes cubes.

Add the prepared marinade.

Toss gently using 2 big spoons.

Cover with a lid and keep it aside for 10 minutes.

Heat the oil on a non-stick tava (griddle) and add the marinated vegetables and paneer. . Also, you can make use of a broad non-stick pan.

Cook on a medium flame for 3 to 4 minutes, while stirring gently and occasionally using a flat spoon, do not mix too much or the paneer will break.

Divide the topping into 2 equal portions and keep aside.

Place a pizza base on a clean, dry surface. Pizza bases are available readily in the market but if you wish to make it at home here is the recipe for a thin crust pizza base. We have used a whole wheat pizza base. You can use any white, multigrain etc.

Spread it evenly using a spoon.

Put 1 portion of the tandoori paneer topping evenly over it.

Repeat steps 1 to 5 to make 1 more pizza.

Place both the Tandoori paneer pizzas on a greased baking tray and bake in a pre-heated oven at 200°C (400°F) for 10 to 12 minutes or till the base is evenly browned and the cheese melts.

Remove the Tandoori paneer pizza and cut each pizza into 4 pieces using a pizza cutter or a sharp knife or a steel flat spatula.
