Spicy eggplant in curd is an unique vegetable recipe with eggplants or brinjals stir fried and then simmered in a tangy and spicy curd based gravy. Add a punch to the dish by tempering the gravy with mustard seeds, chillies and curry leaves.

Method


  1. Cut eggplants into round shape
  2. Mix with salt and turmeric
  3. Fry the pieces in oil till light brown
  4. Beat curd in a mixer
  5. Place in a bowl
  6. Lightly roast urad dal and a few red chillies and grind to powder
  7. Add the powder to the curd
  8. Add salt and sugar as required
  9. Now add the fried eggplant
  10. Heat oil add mustard seeds, red chillies and curry leaves
  11. Let it splutter
  12. Pour over the curd
  13. Sprinkle a little garam masala
