Spanish rice brings a spicy and delicious rice on your plates and is definitely a must try!

2 1/2 cups long grained rice (basmati)
1/4 kg chopped onions
1/2 kg peeled and chopped tomatoes
1 tin Whole corn
1 cup Prawns, (cleaned & deveined)
1 cup salad oil or oil
2 dashes of curry paste
1/4 kg capsicums, cut into cubes
salt to taste

  1. Parboil the rice and drain.
  2. In a dekchi heat 3/4 cup of oil and fry the chopped onions lightly.
  3. Add the vindalo paste and fry well.
  4. Add the prawns, tomatoes, capsicum, whole corn and salt.
  5. Add the water from the can.
  6. Let it cook till the capsicums are nearly done.
  7. Then mix in the rice and mix well.
  8. Pour the remaining oil over.
  9. Cover the dekchi and place it in the oven on medium heat for half an hour.
