Mathris are deep fried flat breads recipe and this Soyabean ki mathri brings out a nice variation by adding soya flour to the maida or refined flour based dough mix.Add ajwain and oil to impart that crispy and flavoured taste.

250 gms plain flour (maida)
150 gms soya flour
carom seeds (ajwain) and salt to taste
oil for kneading and frying

  1. Mix maida and soya flour
  2. Add 100gms oil to it and mix well
  3. Add salt and ajwain
  4. Add water and make a hard dough
  5. Make small balls out of dough
  6. Roll out mathri
  7. Prick these mathri with fork
  8. Fry on medium-low heat till golden
