Soya Milk ( Idlis and Dosas)

This is milk extracted from soaked soya beans, just like coconut milk is extracted from coconut. Use soya milk immediately as it emits a pungent odour if stored for long.
Method- Wash and soak the soya beans in water for at least 3 hours.
- Drain out all the water.
- Blend in a mixer with 3 cups of water to a fine puree.
- Strain through a fine strainer to extract the milk.
- Do not keep this milk for very long as it emits an odour after an hour or so. Best if used immediately.
