Tomato puree recipe collection. Tomatoes are eaten in many, many forms, one of them being pureed. Tomato puree is fairly simple to make and gives a depth of flavor. If you do not want the texture of finely chopped tomatoes, which is sometimes not good in certain recipes, tomato puree is the best option. Tomato puree is made by simply boiling whole tomatoes till the tomato expands and the skin breaks a little, cooling them off and peeling the tomato skin and then blending it till you get a smooth puree. Pureed tomatoes are a great way to give the taste of tomatoes without going through the hassle of chopping them. It also results in a nice, grain-less gravy that is needed for a lot of Punjabi subzis. Paneer Makhani is one such subzi that requires a really smooth gravy for the paneer to absorb all the flavor for which tomato puree is the best.  It also gives a tongue tickling taste when cooked with mushrooms to make a Mushroom Curry.
