Everyone loves the noodle-like appearance and crisp melt-in-the-mouth texture of sev, together with the characteristic rich taste and appetizing aroma of besan. Not only that, besan sev unfailingly delivers a zesty boost to most other snacks that it is added to, especially chaat.

Although sev is instantly associated with chaat, it is interesting to note that it is very popular in South India too. South Indian sev is slightly thicker and sometimes uses a little bit of rice flour for added crispness, but tastes quite similar to its North Indian counterpart. It is also an essential ingredient in the famous South Indian Mixture, which combines sev, boondhi, roasted peanuts and other such deep-fried savories into one exciting cupful! 

Homemade Besan Sev

The good news is that sev is very easy to make, and can be easily prepared at home itself. You can make a small or large batch, as required, cool it and store it in an airtight container at room temperature. It lasts for more than two weeks. 

It requires minimal ingredients – just besan, spices and oil. You require a sev press to press the dough into hot oil for deep-frying. The sev press is easily available in local shops as well as online shopping sites.

U can use the sides of the bread also

I have suggested baking the tart cases but you can stack them up and deep fry them in oil. the cases can be made days in advance and keep well when stored in an air-tight container.
