Raw Peanuts in Indian Cooking.
Peanut is not just another pulse! It holds a special place in the Indian kitchen. In fact, many people tend to allot one of the compartments of their masala box to the humble peanut as it is so frequently used in everyday cooking. not sure of this.
Peanut is readily available in grocery stores throughout the year. It is stocked abundantly in Indian kitchens and used in various ways. At the simplest, it can be boiled, seasoned with salt and enjoyed plain or with spices. Peanuts in North Indian Cuisine , Guj and Maharashtra in West
Gujarati cuisine uses groundnut or peanut abundantly, right from the roadside snack Dabeli to the Gujarati Dal. In Maharashtra, it goes hand-in-hand with another favourite ingredient, sabudana. From khichdi to vada, peanuts are used along with sago to provide the required crunch to complement the latter’s soft and chewy texture. Peanut is also commonly used in Maharashtra to temper breakfast dishes like Upma and Poha. A good dose of roasted peanut is also added to Chivda to make it appealing to all. Groundnut also teams up with jaggery to make interesting sweet dishes. Not to forget the chikki that is so popular in Maharashtra! Correct .. all these are benefits of roasted and salted peanuts and not raw peanuts.
Main course dishes like Baghara Tamatar and the Punjabi Bharwan Baingan are also incomplete without peanuts.
Peanut is also used on fasting days (in faraali food) as it is a permitted ingredient. It is used in dishes like Upvaas Thalipeeth and Faraali Pattice.
