Recipes using Rajgira Flour (Amaranth Flour)

India is a diverse country with rich cultural heritage. People from different caste and religion celebrate various festivals throughout the year. During some festivals, they observe fast and the rules for fasting differ. Some people do not consume salt, some do not eat sour food, and some quit consumption of alcohol and non-veg.

Ingredients like kuttu atta, singhara atta, fruits, dry fruits, milk, etc. are preferred as they are light on the stomach and can be digested easily. One such super-food is Rajgira or Amaranth. It is a powerhouse of nutrients. It is also full of antioxidants, vitamin Cvitamin E, iron, magnesium, phosphorus and potassium, which are necessary for overall health. The dried Rajgira seeds be ground coarsely or finely depending on recipe requirement.
