Indian recipes traditionally use a variety of cooking oils, with ghee (clarified butter), mustard oil, sunflower oil, and vegetable oil being some of the most common choices.

The healthiest oil for Indian cooking is coconut oil. Use Coconut oil instead of processed seed oils like soyabean oil, canola, sunflower oil, corn oil and other omega-6 rich oils should be used in very low amounts.

Choose an olive oil that is high in MUFA for Indian cooking. It is the best choice for Indian salads, stir-fries, and sabzis that can only be cooked on medium heat.
