As the name suggests, hung curd is nothing but curd that is tied up in a thin cloth, mostly muslin cloth, hung up, so that the liquid of the curd comes out. This liquid, also called as whey, can either be discarded or used to knead rotis or parathas. The resultant is a thick, creamy curd with very little liquid that can be used in different ways. Ever had Achari Paneer Tikka and wondered how they get the marinade so perfect and creamy so that it sticks to the paneer well? The secret to this is hung curd! Different flavors and spices like cumin, pickles, garlic and methi are added to the hung curd so that the flavors mend together very well. Then the paneer is added to this and kept aside till the paneer absorbs the flavor and then grilled. Faraali Pahadi Tikka is also made in a similar way. You can make this with paneer and potatoes and change up the ingredients by adding coriander and mint.

A famous delhi snack that uses hung curd is Dahi Ke Kebab. They are so soft that they will definitely melt in your mouth but yet mildly crispy from the outside so that they don’t break down with a twist of crunchy onions inside. For a snack that can be stored for a while, Methi Crispies is perfect. A little bit of hung curd is added to the dough to give it a bit of tanginess and to make it better tasting.
