To chop the doodhi, the skin has to be peeled first and then chopped into required size pieces.

Most of the Indian homes always have lauki in their pantry ready to be used. In a lot of dishes lauki is combined with many other vegetables to make dish that is packed with flavor. The traditional Parsi dish, Dhansak Dal, is made in a similar way. The name itself says that it is combination of dals (dhan) and vegetables (saak) perked up with loads of spices. For a side dish, Lauki Raita is ideal. It gives a nice, cooling effect which complements the spicy nature of Indian food.
