Ingredients
1 1/2 cups sprouted ragi (nachni / red millet) dried and ground to a fine flour
1/2 cup plain flour (maida)
A pinch of salt
1 tsp baking powder
1 tsp baking soda
1/4 cup powdered sugar
2 tbsp condensed milk
water
1/4 cup oil
2 tbsp curds (dahi)
1 tbsp white chocolate chips
1/4 tsp dedicated coconut

To Garnish
1/4 cup white chocolate grated
1/4 cup lightly roasted coconut

To Serve

    Method
  1. Preheat the oven at 180ºc (360ºf), grease the loaf tin and keep aside.
  2. Combine ragi flour, plain flour, salt, baking powder, baking soda and powdered sugar and sieve it well.
  3. Combine condensed milk, oil, curds and fold the sieved mixture into it gradually, cut and fold thoroughly, adjust the consistency with water to make a smooth, thick and creamy batter.
  4. Stir in coconut and white chocolate chips.
  5. Pour the batter into the cake tin and bake at 180ºc (360ºf) for 25 to 30 minutes or until the toothpick inserted in the center comes out it clean.
  6. Allow the cake to cool for sometime and then unmould.
  7. Garnish with grated chocolate and coconut.
  8. Cut into slices and serve with warm healthy green tea.
