Quinoa Salad with Pomegranate Dressing recipe - How to make Quinoa Salad with Pomegranate Dressing

Preparation Time:    Cooking Time:    Total Time:     4Makes 4 serving

1 cup cooked quinoa
2 cups chopped parsely
2 cups chopped mint leaves (phudina)
2 large handfuls of baby spinach (palak)
1 finely sliced onion or 2 finely sliced shallots (madras onions)
2 chopped cucumbers
2 tomatoes , chopped or 250 gms cherry tomatoes
20 gms pumpkin seeds
20 gms chopped almonds (badam) or pistachios
20 gms berries

For The Pomegranate Dressing
3 tbsp pomegranate (anar) molasses
1 tbsp lemon juice
1 tbsp lemon zest
2 tsp honey
50 ml cold pressed olive oil
fresh ground pepper to taste
  1. Combine all the dressing ingredients until creamy. Taste and check it should be lovely.
  2. Mixtogether parsley, mint, spring onion and spinach.
  3. Addthe tomato, cucumber, seeds, quinoa and almonds.
  4. Mixin a few tablespoons of the dressing.
  5. Spooninto a large serving bowl and enjoy.
  6. Haveextra dressing on the side in case you need more.
