Couscous is a tiny pasta which is a staple in Moroccan cooking. it can be found in the pasta aisle in supermarkets.

this can be had as brunch, or a filling teatime tiffin, with some fruit juice to cool you off.

3/4 cup poppy seeds (khus-khus)
3 cups water
1 tsp finely chopped ginger (adrak)
1 tsp finely chopped garlic (lehsun)
1 medium onion, chopped
1 large tomato
1 tsp olive oil
1 jalapeno pepper, deseede and chopped
grated cheese (parmesan, mozzarella or any flavoured cheese of your choice)
salt to taste

  1. Bring the water to a slow boil in a vessel.
  2. Meanwhile,in another hot pan, add oil, and saute the minced ginger and garlic.
  3. Saute on high heat for 1-2 minutes, till they emit a nice aroma.( do not let them brown )
  4. Add the onions and the coarsely chopped jalapeno peppers , saute for 2 minutes , till the onions are soft.
  5. Now add the chopped tomatoes and a pinch of salt.stir well, and cook with lid
  6. For about 5 minutes.
  7. It will form a thick pulp .
  8. To it, add the couscous sufficient salt and 1 cup of boiling water .
  9. Cook with lid.
  10. Check after 4-5 minutes.
  11. Add more boiling water if required,stir and cook on low or medium heat till the pasta is soft and cooked through , and no water remains.
  12. Transfer to a serving dish, garnish with grated cheese and serve hot
