For The Green Chutney
1 cup chopped mint leaves (phudina) leaves
1/2 cup chopped coriander (dhania)
1/4 cup roughly chopped onions
1 pc lemon
1/4 tsp sugar
2 to 4 green chillies , chopped
salt to taste

Other Ingredients
salt to taste
2 cups baby potatoes , unpeeled
1/4 tsp black salt (sanchal)
2 tsp low-fat butter
1 1/2 tsp cornflour , dissolved in 1 tbsp water
1 tbsp finely chopped red capsicum

  1. Combine all the ingredients and blend in a mixer to a smooth paste using very little water. Keep aside.

  1. Combine 4 cups of water and salt in a broad pan and bring to boil.
  2. Meanwhile prick the potatoes with a fork, add them to the boiling water and cook on a medium flame till done. Drain and keep aside to cool for 5 minutes.
  3. Peel the potatoes, add the black salt, salt (as required) and prepared green chutney and toss well. Keep aside to marinate for 15 minutes.
  4. Melt the butter in a non-stick pan, add the potatoes, capsicum and cornflour mixture and sauté on a medium flame for 4 to 5 minutes
  5. Serve hot.
