Experience the magical kofta recipe with the raw bananas in the phaldari koftas. The mashed banana dumplings are topped with a delicious onion tomato based spicy gravy and then baked with mace powder, slit chilies and chopped coriander leaves as garnish. Enjoy with naans or chapatis.

Phaldari Koftas recipe - How to make Phaldari Koftas

Ingredients

For The Koftas
450 gms raw banana
1/8 cup finely chopped onions
1 tbsp chopped ginger (adrak)
4 tsp chopped coriander (dhania) leaves
4 green chillies , finely chopped
1/2 tsp freshly ground black pepper powder
salt to taste
1/2 tsp chilli powder
1/2 tbsp lemon juice
oil for deep frying

For The Gravy
2 tbsp oil
2 cardamoms (elaichi)
4 cloves (laung / lavang)
1/8 cup chopped onions
1 tbsp ginger-garlic (adrak-lehsun) paste
1/2 cup tomatoes , boiled , peeled and pureed
salt to taste
1/2 tsp coriander (dhania) powder
1/2 tsp chilli powder
1/2 tsp dried mango powder (amchur)
1/2 tsp sugar
1/8 cup fresh cream
2 to 3 drops of yellow colour (optional)
1 tsp honey
a pinch of mace (javantri) powder
2 tbsp chopped coriander (dhania) leaves

For The Garnish

Method

    Koftas
  1. Put the bananas in a pan, cover and cook with water for about 30 minutes.
  2. Cool the bananas, peel and mash them.
  3. Add the other ingredients, mix well and divide the mixture into 20 mini balls.
  4. Heat the oil in a kadhai and deep fry till they turn golden brown and crisp from all the sides.
  5. Drain on an absorbent paper and keep aside.

For the gravy

  1. Heat oil in a kadhai and add the cloves and cardamom and saute for 20 seconds.
  2. Add the ginger, garlic paste and saute for 1 minutes.
  3. Add the onions and saute till they turn golden brown.
  4. Add the tomato puree, spices, 3/4 cup water and mix well and cook for 10 minutes.
  5. Add the food colour and mix well.
  6. Add cream and mix well and remove form the flame.
  7. Add the honey and mix well.

How to proceed

  1. Just before serving, add the koftas, mix well and serve hot garnished with coriander.
