One can innovate many varieties of sandwiches, here is three layer corn sandwich which is not only healthy but it is full of protein, calcium and fibre, it is made with the combination of corn, cheese spread, paneer, pineapple pieces and green chutney,sandwich provides ample of calcium for them, and ideal for kids also who avoids drinking milk. So try this nutritious, healthy and protein and calcium rich sandwich.

Ingredients

To Be Mixed Together For The Green Chutney Stuffing
1/2 cup green chutney
1/4 cup grated carrot
1/4 cup grated cucumber
1/2 tsp crushed green chillies
1/4 cup soaked and chopped soya nuggets

For The Corn Stuffing
1/2 cup boiled and crushed sweet corn kernels (makai ke dane)
1/2 cup chopped pineapple
3/4 cup paneer (cottage cheese)
2 tsp cheese spread
2 tsp curds (dahi)
1/2 tsp mustard seeds ( rai / sarson) powder
2 tsp vinegar
salt to taste
1/2 tsp freshly ground black pepper powder
1 tsp sugar
1/2 chopped capsicum
1 tsp crushed green chili

Other Ingredients
18 bread slices
butter as required

tomato ketchup
Method

For the corn stuffing

    For the corn stuffing
  1. Combine the paneer, cheese spread, curd, mustard seed powder, vinegar, salt, black pepper powder and sugar in a mixer and blend to a smooth paste, if the mixture is thick or dry add little curd, blend for a while.
  2. Transfer to bowl and keep aside.
  3. In another bowl combine the corn, pineapple, capsicum, green chili, prepared paneer paste and salt, mix well and keep aside.

How to proceed

  1. Cut the bread slices in round shape.
  2. Apply 3-4 tsp of corn stuffing on one slice.
  3. Cover with the 2nd slice, put 2-3 tsp of green chutney stuffing.
  4. Cover with the 3rd slice, press lightly.
  5. Apply little butter on top of the sandwich.
  6. Put the sandwich in pre heated griller facing butter side downward.
  7. Apply little butter on top of the sandwich.
  8. Grill the sandwich till it becomes brown and crispy.
  9. Cut into two pieces and serve immediately with tomato ketchup.
  10. Similarly prepare other sandwiches.

    Handy tip
  1. I have not applied butter on slices to make it low calorie sandwich, only to make the sandwich little crispy, i have applied butter on both the sides of sandwich. If you are serving the same to kids, you can apply butter inside the sandwich.
  2. For better taste and result soak soya chunks in water for 5 minutes, drain, repeat the same procedure twice or thrice,to remove the fragrance and smell.
