For Patishaptas (pancakes)
120 gms plain flour (maida)
60 gms rice flour (chawal ka atta)
1/2 tsp baking soda
250 ml milk
ghee for shallow frying

For The Filling
100 gms fresh grated coconut
100 gms sugar
100 gms thickened milk
1/2 cup condensed milk
chopped mixed nuts for garnishing

  1. Combine the plain flour, rice flour and baking soda with milk in a bowl and whisk well.
  2. Cover and keep aside for half an hour or while you prepare filling.

  1. Combine the coconut, sugar and milk in a kadhai and mix well.
  2. Cook on a medium flame until they adhere together in a soft moist mass.
  3. Remove from the flame and keep aside to cool.

How to proceed

  1. Heat a 6-inch frying pan and grease with a drops of ghee. Swirl pan around so that it is evenly coated with the hot ghee.
  2. Drop 2 tablespoons of batter in to the frying pan and swirl pan around to coat evenly with batter.
  3. Allow batter to set and cook until underside of patishapta or pancake is turning brown.
  4. With teaspoon spread filling half-inch wide across patishapta at one end.
  5. Fold patishapta over filling and roll over to the other end.
  6. Remove from pan.
  7. Serve hot or cold.
