Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

1 cup long grained rice (basmati)
1 1/2 cups finely chopped spinach (palak)
2 tbsp ghee
salt to taste
2 to 3 onions , sliced vertically

To Be Ground In A Paste
3/4 cup coconut
1 ginger (adrak)
3 to 4 green chillies
1/4 cup chopped coriander (dhania)
  1. Clean, wash the rice and drain the water and keep aside.
  2. Heat the ghee in a pan, add the onions and saute till they turn pink.
  3. Add the rice and saute for 5-10 minutes.
  4. Add the spinach puree and saute for another 5-10 minutes.
  5. Now add the ground paste, salt and enough water, mix well and cover and cook till rice are soft.
  6. Serve hot.
