Nasi Lemak recipe - How to make Nasi Lemak

Ingredients

For The Rice
3 cups rice (chawal)
1 stem lemon grass , chopped
4 cups coconut milk
1 saffron (kesar) strands strand
salt to taste
2 whole dry kashmiri red chillies , broken into pieces

Other Ingredients
1 onion , chopped
1 tomato , finely chopped
1 cup chopped paneer (cottage cheese)
salt to taste
1/2 tsp chilli powder
a pinch of turmeric powder (haldi)
2 to 3 almonds (badam)
2 to 3 cashewnuts (kaju)
1/2 cup blanched spinach (palak)
2 to 3 tsp ghee
Method

For the rice

    For the rice
  1. In a deep non stick pan, add raw rice with sufficient water, mix well and bring to boil.
  2. Add the coconut milk, mix well and simmer till the rice is cooked.
  3. When the rice is almost cooked, add the lemon grass and red chillies, mix well and cook on a slow flame till the rice is completely cooked.
  4. Keep aside.

  1. Heat a tsp of ghee in a pan, add the onions and tomatoes and saute till onions turn golden brown.
  2. Cool and blend the fried onions and tomatoes along with the almonds, cashewnuts and a little water in a mixer to a coarse paste.
  3. Heat the remaining ghee in a pan, add the paneer and fry till they turn golden brown.
  4. Add the paneer to the paste, mix well and simmer till the mixture becomes thick.
  5. Add some water and the palak leaves, turmeric, chilli powder and salt, mix well and cover and cook for 2-3 minutes.
  6. Keep aside.

How to serve

  1. Place the rice in a glass bowl and press firmly.
  2. Now invert the glass bowl over, taking care that it is in the centre of the plate.
  3. Now place a fresh strand of lemon grass on the rice and serve with the side dish.
  4. Serve hot.
