Flavoured aptly with onions, coriander and green chillies, this roti tastes delicious if served hot right off the tava.

  1. Combine all the ingredients in a bowl and knead into a soft dough using enough lukewarm water.
  2. Divide the dough into 6 equal portions and roll out each portion into a circle of 100 mm. (4”) diameter, using a little red millet flour for rolling. Prick at even distance with help of a fork.
  3. Heat a non-stick tava (griddle) and cook each roti, using a little oil, till it turns golden brown in colour from both sides.
  4. Serve immediately.

    1. In a deep bowl put 1 cup ragi (nachni / red millet) flour.
    2. Add 1/4 cup finely chopped onions.
    3. Add 2 tbsp finely chopped coriander (dhania).
    4. Add 1 tsp finely chopped green chillies.
    5. Add salt to taste.
    6. Mix well.
    7. Add enough lukewarm water to make a soft dough.
    8. Knead into a soft dough.

    2. Flatten the dough and dust with ragi atta.
    3. Since this is nachni atta, while rolling you will have to press the corners of the dough.
    4. Roll the belan with soft hands. This is important.
    5. Remember to keep pinching the circumfance of the dough while rolling so the roti does not tear from the corners.
    6. If the roti sticks at the bottom whole rolling, then lift the roti and put some ragi flour on the base off the rolling board.
    7. The dust the top of the roti with ragi flour also.

    Though I’ll it was very difficult to roll avoiding the breakage finally came up very nice. But my suggestion for those diabetic people is be careful.. I have gestational diabetic and had just 2 roti. My reading before breakfast was 5.3 mol/L but later it was 8.2mmol/L

    Tarla Dalal    1 Nachni and Onion Roti yields 18 g of carbs, so it is best to restrict to 1 roti if your blood sugar levels are rising beyond the limit.
