Mini Eggplant Pizzas

You can salt the eggplant slices and set aside for 30 min if you find them bitter. this will remove the bitter juices from the eggplants.
- preheat oven or toaster oven to 425f.
- Brush both sides of eggplant slices with oil, and season with salt and pepper. arrange on baking sheet, and bake until browned and almost tender, 6 to 8 minutes, turning once.
- place tomato slice on each eggplant slice, and season with oregano, basil, and garlic powder. top with cheese and bake until cheese melts, 3 to 5 minutes. serve hot.
