500 gms small brinjal (baingan / eggplant)
2 tsp tamarind (imli) pulp

To Be Powdered and Mixed Together For Stuffing
2 tbsp roasted coriander (dhania) seeds
2 tbsp roasted peanuts
1 tbsp roasted sesame seeds (til)
2 tbsp roasted coconut
3 tbsp oil
3 tsp chilli powder
1 tsp asafoetida (hing)
salt to taste
1 tsp turmeric powder (haldi)
  1. Wash and slit brinjals into 4 upto 3/4 lengthwise.
  2. Stuff the brinjals with the stuffing mixture and arrange them in a microwave idli steamer and steam for about 8 minutes.
  3. Remove, open and cool.
  4. Arrange them in a big microwave safe plate, drizzle little oil on it and microwave at 70% for 4 minutes.
  5. Turn over and microwave for more 10 minutes at 70%, turning twice or thrice till brinjals are uniformly roasted.
  6. Serve immediately.
