1 1/4 cups chopped fenugreek (methi) leaves
3/4 cup paneer (cottage cheese) , cut into 1/2" cubes
1/2 cup sliced onions
1/2 cup chopped tomatoes
1/4 tsp turmeric powder (haldi)
3/4 tsp chilli powder
a pinch of sugar
3 tsp oil
salt to taste
    Main procedure
  1. Combine the paneer, a pinch of turmeric powder, ¼ teaspoon chilli powder and 1 teaspoon of oil in a microwave-proof plate and mix well so that all the paneer pieces are coated with the masalas.
  2. Microwave on high for 40 seconds. Keep aside.
  3. Combine the remaining oil and onions in a microwave-proof bowl, cover with a lid and microwave on high for 3 minutes stirring once in between after 1½ minutes.
  4. Add the tomatoes, remaining turmeric powder, remaining chilli powder, sugar, salt and 1 teaspoon water. Cover with a lid and microwave on high for 2 minutes.
  5. Add the fenugreek leaves, mix well and microwave on high for 1 minute.
  6. Add the cooked paneer, mix well and microwave on high for 30 seconds.
  7. Serve hot.

Methi, Tomato and Paneer Subzi..A great combination of vegetables.. the flavour of the methi is well absorbed by the paneer.. and the tomatoes.. balancing the sour taste. Goes very well with hot rotis..
