Ingredients
1/2 cup boiled green peas
1 cup finely chopped onions
2 tbsp oil
1 cup coconut milk (nariyal ka doodh) dissolved in 2 tsp cornflour
salt to taste

To Be Ground Into A Smooth Paste (using Little Water)
1 1/2 cups chopped coriander (dhania)
6 green chillies , roughly chopped
12 mm (1/2" ) piece ginger (adrak)
10 garlic (lehsun) cloves
1 tbsp lemon juice
10 spinach (palak) leaves

For The Methi Muthias
3 cups finely chopped fenugreek (methi) leaves
4 tbsp whole wheat flour (gehun ka atta)
1/2 cup besan (bengal gram flour)
a pinch asafoetida (hing)
1 tsp sugar
1 tsp ginger-green chilli paste
2 tbsp hot oil
a pinch of baking soda
oil for deep-frying
Method

    For the methi muthias
  1. Combine all the ingredients in a bowl, and knead into a very soft dough using little water approx. 3 tbsp.
  2. Divide the mixture into 12 equal portions and shape each portion into a round dumpling.
  3. Heat the oil in kadhai and deep-fry, a few muthias at a time, till they turn golden brown in colour from all the sides. Keep aside.

How to proceed

  1. Heat the oil in a deep kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the paste and sauté on a medium flame for another 2 to 3 minutes.
  3. Add the coconut milk-cornflour mixture, 1 cup of water and salt and mix well. Bring to boil and simmer for 3 to 4 minutes, while stirring occasionally.
  4. Add the green peas, mix well and cook on a medium flame for another 1 to 2 minutes.
  5. Add the muthias and mix gently.
  6. Serve immediately.

Coriander, Green-peas and coconut milk lends a great flavour to the gravy. Coriander has the most dominating taste, while the green peas and onions give a nice crunch. The methi muthias so crunch and yummy. You can have it just like that. But this combo of the gravy and methi muthias is wonderful.
