Here is a scrumptious toast with a masaledar veggie topping that reminds you of all-time favourites like Samose and Veg Puffs.

A mixture of veggies and potatoes are sautéed with tasty ingredients like green chillies, spice powders and lemon juice to get a tongue-tickling topping, which is placed upon buttered bread slices, garnished with cheese and baked in the oven till the cheese melts and coats the veggie mixture.

The Masala Cheese Toast has a fabulous taste that goes down well with both kids and adults.

Can be made in a handy mini size and served at parties, or enjoyed at home as a tea-time snack.

For The Masala Topping
1 1/2 tbsp oil
1/4 cup finely chopped onions
1/2 tsp garlic (lehsun) paste
1/2 cup finely chopped mixed vegetables (cabbage , cauliflower , carrot and french beans)
1/4 cup boiled , peeled and mashed potatoes
1/2 tsp chilli powder
1/2 tsp lemon juice
2 tbsp finely chopped coriander (dhania)
salt to taste

Other Ingredients
4 whole wheat bread slices
4 tsp butter for spreading
4 tbsp grated processed cheese

For Serving
tomato ketchup

  1. Heat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 1 minute.
  2. Add the mixed vegetables and sauté on a medium flame for 2 minutes.
  3. Add the potatoes, chilli powder, lemon juice, coriander and salt, mix well and cook on a medium flame for 1 minute. Keep aside.

  1. Divide the topping into 4 equal portions and keep aside.
  2. Spread a little butter on all the 4 bread slices and place them on a clean, dry surface with the buttered side facing upwards.
  3. Spread a portion of the topping and 1 tbsp of cheese on each buttered bread slice and bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
  4. Serve immediately with tomato ketchup.

  1. The masala cheese toast is a quick and easy snack option.You can even make use of your leftover sabzi or aloo subji to make this cheese masala toast recipe. There are many ways to make open-toast recipes. You can use your creativity and make an assortment of veg open-toast recipes. Here are some of my favorite quick and easy open-toast vegetarian recipes:

For the masala topping

  1. To make masala topping for masala cheese toast, heat the oil in a broad non-stick pan. Oil can be replaced with butter or ghee.
  2. Once the oil is hot, add onions.
  3. Add garlic paste. If you like your food spicy, make use of Homemade Chilli Garlic Paste.
  4. Mix well and sauté on a medium flame for 1 minute or until the onions are soft.
  5. Add mixed vegetables. We have used cabbage, cauliflower, carrots and french beans.
  6. Sauté on a medium flame for 2 minutes or until vegetables are tender yet crunchy.
  7. Add potatoes. Apart from the vegetables we have mentioned in this recipe, you can add any veggies of your choice like chopped capsicum, bell peppers, tomatoes, boiled corn or peas. We are using only ¼ cup of potato for which you might require only one small potato.   8. Add chilli powder. Add more or less however you prefer.
  9. Add lemon juice and coriander. If you do not have fresh lemon on hand, toss in some chaat masala or amchoor for that tang.
  10. Add salt and mix well. Cook on a medium flame for 1 minute and keep aside.

How to make masala cheese toast

  1. To prepare cheese masala toast, divide the topping into 4 equal portions and keep aside.
  2. Spread a little butter on all the 4 bread slices and place them on a clean, dry surface with the buttered side facing upwards. We have used whole wheat bread slices Brown Bread, you can use any bread variants like White Bread, Multigrain Bread or even Masala Bread Loaf. Instead of  butter you can even make use of Homemade White Butter.
  3. Spread a portion of the topping.
  4. Sprinkle 1 tbsp of cheese on each buttered bread slice. We have used processed cheese but feel free to use any variety of cheese you prefer cheddar, mozzarella or parmesan.
  5. Bake in a preheated oven at 200°c (400°f) for 15 minutes. If you do not have an oven or are looking for a quick alternative then place the masala cheese toast on a hot tava, cover and cook till the cheese melts.
  6. Cut the masala cheese toast diagonally.
  7. Serve spicy masala cheese toast immediately with tomato ketchup. To make it more spicy, you can apply a dash of sandwich green chutney. Also, many street side toasts are sprinkled with sev for an added crunch, you can do the same if you like.
