Mango Rabdi Falooda recipe - How to make Mango Rabdi Falooda



Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

5 to 6 ripe mango , pureed
10 gms edible gum (gaund)
10 tbsp sugar
1 ltr milk
15 to 20 almonds (badam) , soaked and chopped
5 to 7 cardamoms
a few pistachios
50 gms arrowroot (paniphal) flour flour
crushed ice as required
4 to 5 tbsp rose syrup

For Topping
few mango cubes
  1. Boil milk in a deep vessel till it is reduced to half.
  2. Meanwhile, grind the edible gum to a smooth powder and soak in enough water till it swells.
  3. Combine the mango pulp along with 1 tbsp sugar and swollen goond and blend in a mixer till smooth.
  4. Blend half the almonds along with cardamom till smooth.
  5. Add this paste to the milk and mix well.
  6. Add the sugar and mix well.
  7. Chop the remaining almonds and pistachios and add to milk, mix well and simmer for 5 minutes.
  8. Cool and keep aside.
  9. Dissolve arrowroot in water and cook till it becomes thick.
  10. Fill crushed ice in a vessel and keep in a referigerator.
  11. While serving fill 1/4 glass with crushed ice, then 1/4 of it with faluda and pour in the required amount of mango rabri and 2 tsp of sugar syrup.
  12. Mix and serve in a glass with a spoon.
