To Be Mixed Together For The Filling
1 chopped mango
1/4 cup chopped muskmelon (kharbooja)
8 to 10 cherries , deseeded and halved
1/4 cup chopped guava
1/4 cup chopped pear
1/4 tsp dry red chilli flakes (paprika)
1/4 tsp freshly ground black pepper (kalimirch) powder
1/2 tsp lemon juice
salt to taste

For The Pani
1/4 cup mango puree
8 to 10 cups kokum
1 cup chopped coriander (dhania)
1/2 cup chopped mint leaves (phudina)
1/4 tsp black salt (sanchal)
1/2 tsp cumin seeds (jeera) powder
1/2 tsp chilli powder
2 tsp sugar
1 tbsp curds (dahi)
salt tpo taste
20 to 25 pani puris
  1. For stuffing
  2. Soak the kokam in 1/2 cup of warm water for 30 minutes, drain and mash them well. Sieve the mixture and keep aside/
  3. Combine the mango puree, kokam water, coriander and mint and blend in a mixer till smooth.
  4. In a large bowl mix all ingredients and 1 1/2 cop of water.

  1. Take a puri ,fill it with stuffing,pour some imli chutney over it and dip it into the pani and serve immediately.
