Malpua recipe - How to make Malpua

Preparation Time:    Cooking Time:    Total Time:     Makes 2 to 4 pieces

1 cup plain flour (maida)
4 tbsp cream
1 tsp fennel seeds (saunf)
1/4 tsp coarsely ground pepper
1/2 tsp peppercorns (kalimirch)
milk as required

For Sugar Syrup
500 gms sugar
1 tbsp milk
water as required
  1. Add the cream, fennel seeds, whole pepper and pepper powder to the flour and mix well.
  2. Gently add milk to make a thick batter like consistency.
  3. Keep aside.

For the sugar syrup

  1. Take the sugar in a deep pan, add little water as to wet the sugar and bring to boil.
  2. Add 1 tbsp of milk to the syrup to purify it so that all dirt floats on the surface which can easily be removed. Keep aside.

For the malpuas

    For the malpuas
  1. Heat the ghee for frying in a kadai.
  2. As soon as ghee is hot, pour 2 tbsp of batter in hot ghee to form small pancakes and deep fry till they turn golden brown.
  3. Dip the malpuas in the hot sugar syrup for 2 minutes.
  4. Take out the malpuas from the syrup and place it on serving plate.
  5. If you like you can decorate it with slivered dry fruits. . .
