1 cup cashewnuts (kaju)
1/2 cup sugar
1/4 cup water
1/4 tsp oil or ghee

  1. Grind the cashews very fine till it forms into a lump.
  2. Grease a tray with 1/4 tsp oil or ghee and keep aside.
  3. Mix water and sugar in a thick bottom pan.
  4. Cook on medium low heat till the syrup gives one string consistency.
  5. Add ground cashews.
  6. Take off from heat and mix throughly till a soft lump forms and doesn't stick to the pan.
  7. Transfer immediately to the greased tray and flatten it with the help of a greased rolling pin untill it reaches the thickness of 5 mm.
  8. Let it cool for 5 min.
  9. Cut into small squares or diamond shaped pcs.
  10. Store in a dry airtight box.
  11. Stays fresh for about a week at room temp.
