Haldi ie Turmeric has lot of medicinal benefits. This Pickle uses very little oil and uses the phrase 'Health bhi Taste bhi' to its fullest.

Method
    Method
  1. Wash the haldi roots and keep it for drying.
  2. Peel off the skin from haldi and cut it into small julienne strips.
  3. Now in a pan dry roast the mustard seeds, fennel seeds and Fenugreek Seeds for 2-3 minutes and after roasting, coarsely grind the mixture.
  4. Now in a bowl mix the haldi with this mixture. Add salt as per your taste. Preferably around 30 gm.
  5. In another pan take some oil and make a tempering using mustard seeds and asafoeitda.
  6. Add the tempering to the bowl and mix well and add the lemon juice to the mixture.
  7. Keep this mix in a container for 2-3 days.
  8. After 2-3 days your Haldi ka Achar is ready to eat.

Do we keep the mixture for 2-3 days in the refrigerator or at room temperature before eating ?

Tarla Dalal    Hi, as this is made with fresh turmeric, you will have to store it in the refrigerator for long usage..if you wish you can add extra oil..

For how many days this pickle can be stored and can extra oil be added to it in order to preserve it for longer period.

Instead of lemon can inegar help. I have lemon alergy. Can Apply cider vinegar be used?
