Jalebi is basically a north indian sweet, spiral in shape filled with juicy syrup. Its enjoyed most when hot and fresh, straight out of oil and sugar syrup.

Ingredients

For The Jalebis
1 cup plain flour (maida)
4 tbsp curds (dahi)
3/4 cup warm water
2 tbsp melted ghee
2 tbsp cornflour
1 tsp yeast
oil for deep frying

For The Sugar Syrup
2 cups water
2 cups sugar
4 to 5 saffron (kesar) strands
1/4 tsp cardamom (elaichi) powder
1 tsp kewda essence
1/2 tsp lemon juice
Method

For the jalebis

    For the jalebis
  1. Mix yeast in warm water and let it rest for 4-5 minutes till it gets frothy.
  2. Add the plain flour and cornflour and mix well.
  3. Add ghee and curds and mix well until there are no lumps.
  4. Keep the mixture in a warm place for an hour.
  5. After an hour, mix again and add more water if required to make it of pouring consistency.

For the sugar syrup

  1. In a heavy bottomed pan, heat water and sugar together and get it to the boiling.
  2. Cook for 15 minutes on medium flame.
  3. Add rest of the ingredients and simmer for next 10-15 minutes. The syrup should be of two strings.

  1. For frying the jalebis, heat ghee and oil in a deep pan.
  2. Pour batter into piping bag and squeeze the bag to pour the batter into oil with spiral motion.
  3. You can make 3-4 thin strips of spirals at one time.
  4. Deep fry till golden on medium flame and cook from both sides.
  5. Take out of oil and put into the sugar syrup immediately. Allow the spirals to remain in the syrup for a minute and take them out.
  6. Serve immediately.
