Here an attempt is made to easily feed some more fiber and fruits to children and adults who try to escape from the bowl of salad. Ice cream will entice them to pick it up and eat it. We can use low fat ice cream recipe and go slow on calories. Different beautiful combination of ice creams and fruits can be used as per season. It is a beautiful simple recipe.

Ice Cream Salad recipe - How to make Ice Cream Salad

1/2 cup mango ice-cream
1/4 cup mangoes
1/4 cup vanilla ice-cream
2 tbsp chopped basil leaves
1/4 cup sliced cucumber
1/2 cup sliced carrots
1 tbsp olive oil

To Garnish
2 tbsp roasted sliced almonds (badam)
1/2 tsp roasted cumin seeds (jeera) powder
1/4 tsp nutmeg (jaiphal) powder
  1. Take shallow flat transparent dish.
  2. Spread cucumber, carrot, mango and strawberry pieces, sprinkle olive oil and basil leaves.
  3. Spread small scoops of mango, vanilla and strawberry ice cream at intervals.
  4. Sprinkle basil leaves.
  5. Finally top it with almonds and light sprinkle of cumin seeds powder and nutmeg powder.
  6. Serve and eat fresh.
