For The Coconut Crust
2 cups thinly grated coconut
4 tbsp melted butter
2 tbsp sugar

Other Ingredients
4 scoops strawberry ice-cream

For The Garnish
2 strawberries , cut into halves horizontally

  1. Dry roast the coconut in a broad non-stick pan on a medium flame for approx. 8 to 10 minutes or till the coconut turns light brown in colour, while stirring continuously.
  2. Add the butter and sugar and mix well.
  3. Spread the coconut mixture evenly into a 175 mm. (7") loose-bottomed cake tin and press gently.
  4. Refrigerate for atleast 30 minutes and keep aside.

  1. Just before serving, demould the coconut crust and cut into 4 equal wedges.
  2. Place the wedges in a serving plate, top each wedge with a scoop of strawberry ice-cream.
  3. Serve immediately garnished with strawberry halves.
