A hot variation to the popular cold cucumber soup, the hot cucumber soup is simply irrestible. The grated cucumbers , a dash of butter and seasonings make this soup a healthy soothing choice.

Hot Cucumber Soup recipe - How to make Hot Cucumber Soup



Preparation Time:    Cooking Time:    Total Time:     Makes 2 servings

500 gms cucumber , chopped
2 tbsp butter
1 cup chopped onions
4 tbsp plain flour (maida)
4 cups vegetable stock
salt and freshly ground black pepper powder to taste
1 tbsp lemon juice
1/2 cup fresh cream
  1. Heat the butter in a broad pan, add the onions and saute till they turn transparent.
  2. Add the plain flour, vegetables stock, mix well and bring the liquid to boil.
  3. Add the cucumber and cook till the cucumber becomes tender and are cooked, while stirring in between.
  4. Remove from the flame, cool and blend in a mixer till smooth.
  5. Add the salt and pepper, mix well and serve hot garnished wth cream.
