Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving

  1. Whisk olive oil, lime juice, cumin powder, ground pepper and salt together to prepare dressing.
  2. Combine diced avocado, diced mango, cooked cold rice and black beans in a salad bowl
  3. Then, pour dressing over rice and fruit mixture and toss to coat
  4. Mix in Cilantro lightly at the end
  5. Keep in the refrigerator for few minutes and serve cold immediately.
